How can an administrator remove a video broadcast or a screen share during a live event?

On the Business Hangouts platform, you can remove a video broadcast or a screen share by clicking on the X in the top right corner of the feed you want to stop. 

If you want to kick someone from the room altogether (either an attendee or Presenter), you must be logged in as a Host. Click the 'Participants' button from the top menu bar, then the 'kick' button next to the attendee or Presenter you want to kick from the room. It will ask you to confirm this, and then they will be kicked from the room.
